About Canonical Tag

Normally we use canonical tag multiple pages in a website. Can we use canonical tag in multiple websites?

If i have 5 websites with same content or simple changes like if one site has new york, another one has new jersey. How can we differentiate to Google bot that sites are different, Can anyone share with me if any method are available.
